Mar 29, 2012 - yea those ceramic knifes are so easy to chip! that's one reason they are not that popular. they are sharp as hell and stay sharp for a long time but you have to be SUPER SUPER careful with them. high carbon steel is fragile already and ceramic is even worse. i am kinda surprised that your edge didnt even last 3 years though.

Mar 29, 2012 - I bought a set of Kyocera ceramic blades about 3 years ago. They were ridiculously sharp when I first got them, and nice to use, but as Bob said - no knife will remain sharp indefinitely with daily use. My ceramics have become dull, and I need to mail them back to Kyocera for resharpening. Also, they are very prone to chipping and breakage. One of mine has a broken tip from forcing a little too hard against a thick-skinned squash.

Mar 24, 2012 - This guy is fos, this video is fos, he is comparing the ancient jap forging techinque with the mechanized way the shun are made as if there is some correlation between the two. The Shun knife is factory made knife and the methods used to make the shun are no different than cutco, or henckels. Stamp , polish , sharpen, market. The difference is ,if the edge chips (and they do chip) on this knife shun does not stand by their knives and the customer is an idiot for careless handling of the knife.

I came into this video, being a mild knife collector with a lot of knowledge who doesn't expect anything less than a razor's edge on my knives. I was expecting more bullshit cooking knives claiming to be "high carbon" no name steel and Japan, which makes it better apparently. But nope, I was pleasantly surprised. I would own these kitchen knives myself.

America's Test Kitchen like to represent the best products at a cost concious price, which Victorinox / Forschners Knives are; even if Cutco knives where the same price they would still be inferior.

Feb 2, 2012 - The Cutco bread knife is actually pretty decent. The others are poorly balanced and while they are capable of retaining a working edge for a very long time, they don't hold a fine edge very well nor are they easy to sharpen. You should get at least one out of two from any given knife!

Jan 30, 2012 - very happy, Mrs just bought me an IO Shun knife set for my birthday. Wanted something a little different from the usual Global etc... Cannot wait to start using them. Laughing at some of the over the top, Nerdy, and sometimes "I have no life and cannot get a girlfriend" comments on here. Gez, get a life. You cannot please everyone, and all have different tastes. Mine is class, hence the purchase :) lol

Jan 30, 2012 - Damascus steel though.. isn't great. It's pretty, but it's not really "good" by today's standards. It's also why Kershaw(Shun) cheats, by wrapping it around a good blade steel like vg10. If they didn't the edge wouldn't hold. So you get a little bit of good steel wrapped in "pretty" bad steel, and you pay alot for it. If you take the cable from a telephone pole, hammer it flat, and then dunk it in acid, you'd have damascus steel.
